I took her easy recipe and made it in the Crockpot to save room in the oven which is in high demand for holidays. It gives you that sweet balance for all savory dishes on the table at Thanksgiving. Once I had it I knew it needed to be at every Thanksgiving going forward! The sweet and creamy flavor pairs just right with the turkey and mashed potatoes. She is famous for her pumpkin rolls and this creamy cheesy corn casserole. The first time I had this recipe it was made by my Aunt Rose. Whenever a recipe has that many different names I know it’s a tried and true recipe that has been handed down for generations because it is so loved. The sweet corn side dish also goes by the name Corn Pudding or Jiffy Corn Casserole! I have found so many different names like cream corn casserole, sweet corn spoon bread casserole, corn spoonbread, and sweet corn casserole. Once you make Corn Casserole in the Crock Pot you won’t be able to have a holiday meal again without it! This creamy and rich recipe uses canned corn, gluten-free cornbread mix, sour cream, butter, and cheddar cheese to make this classic side dish that is bound to be a crowd pleaser at Thanksgiving, Christmas, or even summertime BBQs.
